Head south east into Natural Bridge and Boone Forest.  There are some wonderful roads down in Hazard and Harlin (but dont stop, make sure you have gas to get through).  Being in Lexington, you have access to some great roads in horse country within minutes of getting outside of New Circle.  I spend a lot of time out there.

You should take an afternoon and head to Lawton Mushroom Mines, just past Morehead.

Lots of good twisty roads in all directions, or more scenic roads up through "horse country". I suggest picking up a DeLome Gazzeter Map book for Kentucky and checking out the information it contains. Lots of natural features and historical places to check out all around the state, but especially in the central bluegrass around Lexington and heading south. Kentucky has as good of riding roads as anywhere in the country IMO, just not as well known as some other states perhaps. Please try to join us at some of the monthly lunch meet-ups that we will be soon be starting up again.
